Ginger Scallion Dipping Sauce

An accompaniment for Hainan chicken, Chinese steamboat, or drunken chicken

Ingredients

  • 100g fresh root ginger, peeled
  • 2 whole stalks spring onion, including the white part
  • 1 whole shallot
  • 1 tsp salt
  • ½ tsp shan nai ginger powder
  • ¼ tsp white sugar
  • 2 tsp Chinese rice wine
  • ~80ml peanut or canola oil

Steps

  1. Using a cleaver or mortar and pestle, crush the peeled ginger until finely textured. Set aside in a bowl.
  2. Crush the shallot to a medium texture, then repeat with the spring onions (including the white part). Keep each in its own bowl.
  3. Heat the oil in a saucepan or wok to a moderate temperature. Add the crushed ginger and shallot, stir quickly, then add the salt, shan nai ginger powder, and sugar.
  4. Almost immediately, add the rice wine around the edge of the wok or pan — this only takes a few seconds.
  5. Transfer to a serving bowl. Once cooled, stir in the chopped spring onions.
