Ginger Scallion Dipping Sauce
Ingredients
- 100g fresh root ginger, peeled
- 2 whole stalks spring onion, including the white part
- 1 whole shallot
- 1 tsp salt
- ½ tsp shan nai ginger powder
- ¼ tsp white sugar
- 2 tsp Chinese rice wine
- ~80ml peanut or canola oil
Steps
- Using a cleaver or mortar and pestle, crush the peeled ginger until finely textured. Set aside in a bowl.
- Crush the shallot to a medium texture, then repeat with the spring onions (including the white part). Keep each in its own bowl.
- Heat the oil in a saucepan or wok to a moderate temperature. Add the crushed ginger and shallot, stir quickly, then add the salt, shan nai ginger powder, and sugar.
- Almost immediately, add the rice wine around the edge of the wok or pan — this only takes a few seconds.
- Transfer to a serving bowl. Once cooled, stir in the chopped spring onions.
